The Chicken Parmo – The tasty Teeside
treat. This popular NorthEastern dish is a dream take-out; especially after a
night out on the town.
We all have those nights where a take-away
seems far more appealing than cooking for ourselves after a busy day, but one
of these dangerous beasts can do us more harm than satisfaction is worth. And
let’s not beat around the bush here, we know you’re not sharing. The damage is
done at 2600 calories and 150grams of fat, and if that doesn’t put you off then
the way it’s made will. Processed chicken and pork is blitzed up along with its
fatty juicy bits and then pummeled into a block of meat. Now, we do not want
you eating this! That’s why we have gone out of our way to give you the best
recipe you can find in culinary delights in which you’ll have your taste buds
tingling. We will continue to eat this dish without feeling any guilt, EVER!

What it is – Chicken or pork fillets are
flattened, then dipped in egg and then breadcrumbs. After this it is
deep-fried. After being deep-fried a thick white sauce similar to béchamel
sauce is poured over the top and topped with grated cheese. Nowadays Cheddar
cheese is preferably used instead of Parmesan cheese that originally gave it
its name. It is then grilled or baked to melt the cheese and served with chips
and salad.
Our Recipe:
Ingredients:
4 Chicken breasts
2 egg whites
1 cup of fat free breadcrumbs
½ a cup of shredded Parmesan cheese
1 and ½ cups of low fat marinara sauce
Cook time – 18 minutes
Total times – 38 minutes
Prep time – 20 minutes
Enjoy with some fresh veg or noodles, but
we know you’ll choose chips!
Preparation:
Preheat oven to 450 degrees.
Place chicken breasts between two sheets of plastic wrap
or waxed paper. Flatten to a 1/2-inch thickness using a rolling pin or a small,
heavy skillet.
Place egg whites in a shallow bowl, and breadcrumbs and
half the Parmesan cheese on a plate.
Dip each flattened chicken breast first in egg whites,
allowing excess to drip away, then coat in the breadcrumb/cheese mixture. Place
chicken on baking sheet coated with nonstick cooking spray. Bake chicken for
15-18 minutes, turning once, until chicken is cooked to an internal temperature
of 160 degrees.
While chicken is baking, heat low-fat marinara sauce in
a small saucepan over a low heat.
When chicken is cooked, transfer to four plates; spoon
sauce over each chicken breast, and sprinkle the remaining parmesan cheese on
top.
